VINIFICATION AND AGING
When ripe, the grapes are selected and harvested by hand using small boxes. Ethanol fermentation is followed by a period of lees ageing. The wine is then filtered and put in a sealed tank for second fermentation, and is kept in this tank for at least three months before bottling.
